Strawberry Yoghurt Chiffon Cupcake 'Strawberries'

I have a request for some cupcake strawberries for a birthday so here they are :)


I made cupcake strawberries for my younger kid's Children's Day celebration at school recently. The recipe for this batch of "strawberries" is adapted from that. I replaced half of the strawberry puree with strawberry yogurt and used chocolate paste made from cocoa powder for the seeds instead of white chocolate as the white chocolate tends to absorb some of the red colouring from the cake. I used the same silicone cakepop mould as the one for soccer ball mini chiffon cupcakes.

Dissolve some cocoa powder in hot water to form a paste with the consistency of melted chocolate. Transfer the chocolate paste into a piping bag (or ziplock bag) and snip a tiny hole at one end. Pipe dots for the strawberry seeds onto the cakes. Dry the decorated cakes in airtight container.

It's been a busy couple of days with many cupcakes to make! But I still find time for my kids. Here's one way...

So thankful that my mum was around to help to pack the strawberries in individual packets. It sped things up a bit :).
